Chicken Fried Rice


Serves 4-6


Ingredients

2 cups prepared rice*
1 cooked chicken breast, cut into bite sized pieces and seasoned with salt and pepper*
1/2 cup frozen mixed vegetables
2 green onions, chopped
1 clove garlic
1 egg
3 tsp. sesame oil, divided
2 TBS soy sauce

Instructions

*Cook your chicken and rice first and set aside.
  • Whisk egg and 1 tsp of oil in small bowl, set aside.
  • Heat 2 tsp oil in large wok/skillet.  Add vegetables, fry until heated through/tender (about 2mins). 
  • Add garlic, cook for 30 more seconds.
  • Push veggies to the side, add egg mixture and scramble.
  • Add cooked chicken, rice, and soy sauce to pan and toss to combine.  
  • Enjoy!

Sweet Coconut Rice



This simple and sweet rice is a perfect side option with a savory dish.  We paired ours with teriyaki chicken from the grill.  Mmmmm.

I N G R E D I E N T S

2 cups white or jasmine rice
1 (14 ounce) can coconut milk
2 cups water
1 teaspoon kosher salt
splash of white vinegar*
2-3 tablespoons sugar
1/4 chopped green onions
Black pepper to taste

I N S T R U C T I O N S

Combine rice, coconut milk, water, salt, vinegar, and sugar in a saucepan and bring to boil.  Turn heat to low and cover for 20 minutes or until most of the liquid is absorbed.  Allow to stand 5 minutes.  Add chopped green onions and salt and pepper to taste.

*Adding vinegar to the water before cooking rice helps keep the grains separated and prevents the rice from becoming overly sticky or mushy.
